Fairly neutral in flavor, this wine yeast has high alcohol, ethanol and sulfur dioxide tolerance. It is a great yeast for dry white wines and fruit juices and restarting stuck fermentations in both wine and beer. Despite it's name is is not recommended for sparkling wines and champagne.
